Curried Chicken Fruit Salad

Lots of chopping involved, but this refreshing and healthy-tasting dish is worth it. Goes great with pita bread and hummus for a Mediterranean-feeling dish.

Ingredients:
1.5 lbs. chicken, diced (I used boneless and skinless chicken thighs from TJ’s)
Olive oil
1 red onion, diced (optional)
1 cup raisins
1 cup grapes, halved
1 apple – peeled, cored, diced
A scoopful of raw almonds, finely diced
A few green onion stalks, chopped

2 tablespoons (eyeball it) mayonnaise (substitute yogurt if desired)
Salt and pepper
Curry powder
Paprika
Fresh lemon juice

Preparation:
Cook chicken (don’t overcook!) with olive oil over medium heat, and then set aside, without juices. Cook red onions and add curry powder (one recipe says that the heat “releases the flavor of the curry,” which I haven’t tested yet).

Meanwhile, in a large mixing bowl, add the following raw ingredients: raisins, grapes, apple and almonds. When cooked, add the chicken and red onions. Then, add the mayonnaise, and then spice with salt, pepper, curry and paprika to taste. Top with green onions and fresh lemon juice, and then serve with pita bread and hummus on the side.
