My cooking generally turns out fine, nothing mind-blowing. Just pretty good for a regular day. BUT this ham soup turned out AMAZING, there’s no getting around it. I used the remains of a honey/sugar-glazed ham from Thanksgiving, and it was the best use of leftovers, like, ever. I advise making as much of this amazing soup as possible because it goes really fast. I ended up making it twice because it was so good and nobody got enough. At the BBQ my roommate KC hosted a couple weeks ago, his friend marinated and grilled some chicken that turned out quite well. Since I had a handful of lemons and some cilantro on hand, I tried to recreate the magic, or at least approximate it.
Caesar salads are one of my favorite kinds of salad. The cold, crisp romaine lettuce, the tangy, creamy dressing and the decadent, long slivers of Parmesan cheese on top combine to make a simple but thoroughly enjoyable appetizer or meal in itself. So, with some recently purchased Worcestershire sauce on hand, I decided it was time to try making it.
Even though I didn’t grow up eating it, I had been wanting to make meatloaf ever since I was re-introduced to it a few years back, probably at a comfort-food type establishment and probably with some nice gravy. I especially like that the dish looks and tastes like it sounds: meat + loaf. No mincing words there.
Although yesterday felt like the hottest day of the year so far, I felt like eating some chili today. It’s great in big batches, it’s filling and it goes great over rice. Still, I’m mostly looking forward to the leftovers – it’s been a while since I had a chili cheese hot dog, so I thought I should remedy that.
